The very best cuts of beef are traditionally used to prepare steaks. The length and degree of doneness depend on what each individual diner prefers. Medium rare - warm centre with a temperature of 55 °C and pink centre.
Medium – the very centre is still pink and the colour of the rest of meat blends into a grey-brown colour.
Medium well – the centre has a temperature of 65 °C and there is only a hint of pink, the meat is almost completely brown and is slowly losing is juiciness.
Well done – the last degree of doneness when the steak is completely cooked all the way through. The temperature of the centre is 71 °C, the meat is cooked through and the centre is grey-brown.

The beef used for steaks here comes from the American Midwest from a few carefully selected farms where animals are bred naturally. This of course has an impact on the quality of the meat and the steaks themselves. You get on your plate meat from an animal which was bred without hormones and antibiotics and which did not lead a stressful life.
When preparing steaks, it is important to leave the meat you have bought to age or mature – this being for a period of at least 30 days. Only then should it be used to prepare steaks.
